The first time I had duck was in Paris and to this day it’s still one of the best meals of my life. It was so good! I’ve been trying to recreate that duck but I haven’t exactly mastered it. I will though. Don’t you worry. In the meantime, I had some left over fat from the last duck I roasted and I thought it was time I put some of that golden deliciousness to use. Hence Duck Fat & Sage Mushrooms were born! They’re so good. They won’t last long. Promise!
Grab a fork and dig in. If you’re having friends and family over be prepared to double the recipe. These little guys are going to be the first to go. You might even find someone trying to lick the bowl. These Duck Fat & Sage Mushrooms are crazy delicious!

EPIC’s Cage Free Duck Fat is part of their Whole Animal Project where they use more of the whole animal in their nose to tail process. I’ve found it in Whole Foods and on various online markets.
