Who doesn’t love a good old-fashioned BLT? Especially, when you et your hands on some nice thick cut bacon. Well, this salad is better than the old-fashioned BLT’s of yore. This has a little kick to it with the garlic-y dressing and the blue cheese. It’s like a full-blown flavor explosion. I may have eaten this salad twice a day for a week and I may have even had it for breakfast. It’s so good. So good in fact that I’m thinking I need to make it again today. I think I’m addicted.
2 slices of thick cut bacon
2-3 handfuls of mixed greens
1 handful of cherry tomatoes, quartered
1 clove of garlic, minced
2 tbsp mayonnaise
1 tbsp rice wine vinegar (white wine vinegar will also work)
Salt & Pepper
Grab your trusty cast iron skillet and cook up the bacon. While that’s cooking grab a plate and toss on a couple handfuls of some baby mixed greens or any lettuce you have floating around in your fridge. Slice up the tomatoes and toss those on the greens. Add a little blue cheese. Grab a small jar with a secure lid (think Ball Jar or the like). Into this add the minced garlic, mayo, vinegar, and some salt and pepper. Oh, and add a spoonful of the bacon drippings. Trust me it’s amazing. Secure that lid and give it a good shake. Once the bacon has cooled you’ll want to chop it up and sprinkle it over the salad. Finally, drizzle dressing over the top. Add a little more black pepper, to taste, and dig in.
